Brrrr – feel that winter chill. It’s the time of year for some nice hot, steamy, warming soups and slow cooked casseroles made with bones and stewing meat from our meat department. Meet Toby Whitten, meat department supervisor who first started working in the family grocery business in 1983 and meat department manager Herb Glenny who has worked in the meat trade most of his working life. Obsessed with providing premium quality meat cuts for their customers, they source meat from selected Australian suppliers. Beef mostly from Queensland, lamb from New South Wales and Tasmania, chicken from Nerang in SE Qld and pork from a local supplier in Lowood. Making a spag bol for the kids? Try our premium grade lean mince. Or Toby’s favourite roast beef recipe, cooked with a thick coating of grain mustard and honey. Bake in an oven bag for 25 mins/500 gms @ 160 degrees C, then take out of the bag and bake for a further 25 minutes. How about one of our new easy carve legs of lamb? Cut several horizontal pockets with a sharp knife and fill with fresh chopped rosemary, garlic, salt and black pepper. Roast for 30 mins/500 gms + 30 minutes @ 190 degrees C and serve with a selection of vegetables roasted with olive oil, fresh rosemary, black pepper and sea salt. The quality of our premium grade chicken is excellent. Feeling adventurous? Try a Thai green chicken curry with a tray of fresh, boneless chicken thighs sliced into thick strips, seared in a hot frying pan and then simmered for 45 minutes in tinned coconut milk with a knob of fresh ginger, one bunch of fresh coriander, one bunch of fresh basil, one fresh chilli pepper, two cloves of garlic, an onion, all finely chopped together, and then add the zest and juice of a whole lemon or lime. Add some fresh veggies such as broccoli, baby sweet corn, and/or green beans 10 minutes before the end. Serve with long grained rice boiled vigorously for 10 minutes in plenty of water, drain and serve. Easy to cook and so yummy to taste. All ingredients available from our meat, fresh veg and grocery sections. For a quick tasty meal, try our very tender and moist, double smoked pork medallions and spare ribs. Just roast in an oven for 35/45 minutes at 190 degrees centigrade or cook on the barbie. If you fancy a mixed grill, try our gluten free sausages from South Australia – they are simply sensational.
